Congo Bars

Congo Bars

Congo Bars Recipe:
(Recipe adapted from Bakerella)

2 3/4 c. all purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
2/3 c. butter, softened
2 c. brown sugar
3 eggs
1 tsp. vanilla
1 package milk chocolate chips
1 c. chopped pecans (optional)

Preheat oven to 350 degrees. Sift flour, baking powder and salt in a large bowl. Set aside. Combine butter and sugar using a mixer until blended. Add eggs, one at a time to sugar mixture, mixing on low in between each addition. Add vanilla and mix. Add flour and mix until combined. Stir in chips and then pecans.

Coat a 9x13 pan with non-stick spray and spread batter evenly into dish.

Bake at 350 degrees for 30 minutes or until top is golden brown. Make sure you don’t over bake.

Pizza Dunkers

Pizza Dunkers

INGREDIENTS

3 oz turkey pepperoni (half of 6-oz package), chopped
4 medium green onions, chopped (1/4 cup) (I used chopped mushrooms)
1 jar (14 oz) pizza sauce
2 cups shredded mozzarella cheese (8 oz)
10 soft bread sticks

DIRECTIONS

  • In 1 1/2-quart slow cooker, mix pepperoni, onions and pizza sauce.
  • Cover; cook on Low heat setting 2 hours (if slow cooker has heat settings, use Low).
  • Stir in cheese. Cover; cook on Low heat setting 30 minutes longer or until mixture is hot and cheese has begun to melt. Serve dip with bread sticks.
If desired, omit the green onions from this recipe and substitute any of your favorite pizza toppings, such as ripe or green olives, sliced mushrooms or cooked Italian sausage.

Cheese Soup

Cheese Soup

Cook in 2 cups boiling water:

2 Cups chopped potatoes

½ Cup sliced carrots

½ Cup chopped celery

¼ Cup chopped onion

1 tsp salt

Dash of pepper

Make white sauce:

¼ Cup margarine

½ Cup flour

2 Cups milk

When it starts to thicken add 8 oz. cheese whiz. Stir until smooth. Add sauce to undrained vegetables and simmer.

Cheese Bread

5 cups hot water
2/3 C oil
2/3 C honey
1 T salt
6 cups wheat flour
2 T yeast
5 C white flour

Mix everything in a large bowl except the white flour. Add as much as you can of the white flour and then knead in the rest. Turn out onto a floured surface and separate it into 5-6 rolls. Knead and roll out each roll and sprinkle with cheddar cheese (however much you like). Roll up and tuck in the ends and put into sprayed loave pans. Heat oven to 250 degrees then turn off when you put the loaves in. Let them rise till the right height and then turn the oven back on to 350 degrees and cook for 30 minutes.

Marshmallow Marble-Top Fudge

2 C miniature marshmallows

2 T butter

2 C semi-sweet chocolate chips

1 can sweetened condensed milk

1 tsp. vanilla

Dash salt

Line an 8x8 pan with foil. Place marshmallows and butter in medium bowl and set aside.

Place chocolate chips, milk, vanilla and salt in microwave safe bowl. Microwave for one minute, stir then microwave for another 15 seconds. Spread evenly in pan.

Microwave marshmallows and butter for 30 seconds. Microwave for an additional 30 seconds and stir till smooth. Spread on top of chocolate mixture and make swirls with a butter knife. Refrigerate for 2 hours or overnight.
